Tasting Notes:

Aromas of dark cherries, plum and licorice. It’s a seductive nose enticing you in for the initial taste. Full bodied Heathcote Shiraz at its finest with ripe black berries, plum, aniseed and dark chocolate all obvious features on the palate. Some earthy character and a firm tannin backbone are also evident although have harmonized well with time in bottle to combine with the fruit flavours and provide a plushness on the enduring finish.

Technical Notes:

Sourced from the oldest vines on the estate, we bunch thin and then hand-picked fruit at optimum ripeness. The fruit was destemmed with 10% whole bunch fermentation. Post ferment the wine was transferred into French and American oak for a period of 16 months then was bottled with minimal fining or filtration. Extending bottle aging prior to release ensured drinkability upon release.
