The Fagor Kore 900 commercial tilting bratt pans are versatile and high-capacity, making them the perfect multi-functional choice for your kitchen. With the capability to function as a frying pan, fry-top, kettle, boiling pan, and bain marie all in one machine, you'll enjoy efficient, streamlined cooking and preparation.
Versatility
Thanks to the functional elements that our pans possess (adjustable thermostat between 50 and 310oC, water inlet tap for filling the tank), they can be used as four different devices:
- Like a frying pan: for lightly fried foods. By filling the tank with a certain level of oil we can fry fish, breaded produce, eggs, etc.
- As a fry-top: for grilling or "dry cooking". Thanks to the temperature that can be reached on the bottom, they can be used as an grill to cook seafood, fish, meat, etc.
- As a direct heat boiling pan: for wet cooking. We can prepare sauces, stews, rice, etc.
- As a bain marie: maintaining a minimum temperature inside the tank, to preserve sauces or garnishes, or even to cook in the bain marie.
Cleaning
We design the tanks of our pans so that the edges and corners are made with rounded radii and angles, in accordance with the EN-203-3 criteria on materials in contact with food. These radii in edges and corners are never less than 3.5 mm, which facilitates the cleaning of the tank, especially in stainless steel tanks.
Automatic filling of the tank with water by means of the filling tap facilitates the cleaning tasks.
The possibility of raising the tank allows it to be emptied completely after cleaning.
The wide discharge mouth helps speed up the emptying process. The double wall lid, with no grooves or screws in sight, facilitates cleaning.

- Laser-cut joints, automatic welding and polishes. Screws hidden from view.
- Motorised or crank operated elevation systems which are able to raise the pan until it it's vertical, to empty it completely
- Versions with cast iron and stainless steel pans
- Pan design with a rounded corners and no edges, and with a wide opening for unloading, making all cooking and cleaning operations easier.
- Flange around the perimeter to stop any condensed water from spilling over.
- The bottom of the wells is very think for (8mm for iron pans and 10 mm for stainless steel pans), guaranteeing even heat distribution.
- Pans filled with water by means of electric valve operated with switch on the front of the machines. The filling pipe is located at the back fo the machine.
- Double walled lid with drainer at the back to redirect water of condensation back into the well.
- Lid balance system by springs.
- Compensation system to avoid heavy falls. Can be regulated, with the same system for all modules.
- Micro breaking switch halts heating when the pan is raised.
- High temperature enamelled cast iron flue protector.
- Access to the components from the front
- Machines with IPX5 grade water protection
- Front access lid handle
- Temperature of the bottom of the pan controlled by thermostat, between 50 and 310oC
- The heating by branched burners located in the base of the pan, together with the high thickness of the bottom of the pan, ensure maximum uniformity of temperature distribution in all cases, guaranteeing even cooking.
- Gas heated models use steel burners with six branches (eight in the pan with one and a half modules), operated and controlled by safety valve with thermocouple.
