DOSE Level Tamper with WDT Tool: This innovative 2-in-1 tool combines a Weiss Distribution Technique (WDT) tool which declumps your ground coffee and a spring-loaded level tamper for the same tamp every time. This reduces channeling and helps you acheive consistent delicious espresso.
Now here is the important part.
The JOE Recipe - 3 key variables which when all achieved together make delicious coffee. Let's Joe
Part 1: THE DOSE- Weigh 18g of ground coffee into your portafilter.
At this point we use our WDT Tamper to unclump and distribute the coffee grounds and then Tamp evenly and with consistent pressure.
Part 2: THE YEILD - Weigh 36g of espresso into your cup. Stop the shot manually.
Part 3: THE TIME - Time how long it takes you to get those 36g of espresso. How long did it take? Less than 25 seconds? Grind finer. More than 30 seconds? Grind coarser.
Part 1 and Part 2 are controlled. Don't change them. Change the grind to change the time.
*Assumptions - You are using a 54mm Breville portafilter with a double shot (or 18g) basket found on the Breville Barista Express, Breville Barista Pro, Breville Bambino or Breville Barista Touch.
If you have a machine with a 58mm Portafilter Change your dose to 21g and your yield to 42g
Espresso always works close to a 1:2 brew ratio meaning 1 part ground coffee to 2 parts espresso into the cup. And between 25-30 seconds is a good sweet spot for most coffees.
We challenge you to take our advise and follow the map set out for you by Joes. If you are still struggling reach out and someone will help you get it right. If we can't help you (hasn't happened yet) we will give you your money back.
